  • 1 Kadai Or large fry pan

Ingredients

  • 1 tbsp Ghee
  • 1 tbsp Butter
  • 1 Onion Finely chopped
  • 1 Green chili Finely chopped
  • 1 tsp Ginger Fresh pressed
  • 1 tsp Garlic Fresh pressed
  • 2 Tomato Finely chopped
  • ½ tsp Turmeric powder
  • 1 tsp Kashmiri red chili powder
  • 1 tsp Garam masala
  • 1 tsp Coriander powder
  • 1 tsp Himalayan pink salt
  • ½ tsp Black peppercorn Fresh ground
  • 6 Eggs Fresh
  • 2 tbsp Cilantro Fresh, finely chopped

Instructions

  • Heat the butter and ghee in a kadai or fry pan. Add the chopped onions and green chilis. Stir fry until onions soften and begin to brown.
  • Add the ginger, garlic stir frying over medium heat for a few second. Then add the chopped tomatoes and stir and cook until the tomatoes soften.
  • Add the powdered spices - Turmeric, Kashmiri chili, garam masala & coriander powder; salt & pepper. Stir and cook for several minutes.
  • When the spicy tomato and onion mixture is soften and mushy, add the eggs, cook and stir constantly until the eggs are cooked.
  • Remove from heat and stir in finely chopped cilantro. Serve with lightly grilled pav rolls.
