Spicy Scrambled Eggs
Quick and easy spicy blend of scrambled eggs on dinner rolls (Pav). In India this is called Egg Bhurji

- 1 tbsp Ghee
- 1 tbsp Butter
- 1 Onion Finely chopped
- 1 Green chili Finely chopped
- 1 tsp Ginger Fresh pressed
- 1 tsp Garlic Fresh pressed
- 2 Tomato Finely chopped
- ½ tsp Turmeric powder
- 1 tsp Kashmiri red chili powder
- 1 tsp Garam masala
- 1 tsp Coriander powder
- 1 tsp Himalayan pink salt
- ½ tsp Black peppercorn Fresh ground
- 6 Eggs Fresh
- 2 tbsp Cilantro Fresh, finely chopped
Heat the butter and ghee in a kadai or fry pan. Add the chopped onions and green chilis. Stir fry until onions soften and begin to brown.
Add the ginger, garlic stir frying over medium heat for a few second. Then add the chopped tomatoes and stir and cook until the tomatoes soften.
Add the powdered spices - Turmeric, Kashmiri chili, garam masala & coriander powder; salt & pepper. Stir and cook for several minutes.
When the spicy tomato and onion mixture is soften and mushy, add the eggs, cook and stir constantly until the eggs are cooked.
Remove from heat and stir in finely chopped cilantro. Serve with lightly grilled pav rolls.
