Spicy Scrambled Eggs

- 1 Kadai Or large fry pan
Ingredients
- 1 tbsp Ghee
- 1 tbsp Butter
- 1 Onion Finely chopped
- 1 Green chili Finely chopped
- 1 tsp Ginger Fresh pressed
- 1 tsp Garlic Fresh pressed
- 2 Tomato Finely chopped
- ½ tsp Turmeric powder
- 1 tsp Kashmiri red chili powder
- 1 tsp Garam masala
- 1 tsp Coriander powder
- 1 tsp Himalayan pink salt
- ½ tsp Black peppercorn Fresh ground
- 6 Eggs Fresh
- 2 tbsp Cilantro Fresh, finely chopped
Instructions
- Heat the butter and ghee in a kadai or fry pan. Add the chopped onions and green chilis. Stir fry until onions soften and begin to brown.
- Add the ginger, garlic stir frying over medium heat for a few second. Then add the chopped tomatoes and stir and cook until the tomatoes soften.
- Add the powdered spices - Turmeric, Kashmiri chili, garam masala & coriander powder; salt & pepper. Stir and cook for several minutes.
- When the spicy tomato and onion mixture is soften and mushy, add the eggs, cook and stir constantly until the eggs are cooked.
- Remove from heat and stir in finely chopped cilantro. Serve with lightly grilled pav rolls.
