This recipe is very similar to what is known as “aloo gobi” or potatoes & cauliflower, a common “sabji” vegetable dish in northern India. I left out the potatoes to reduce the carbohydrates, but you can easily adjust the recipe and add diced, peel potatoes.

Ingredients – Six basic spices & herbs

  • Cumin seeds
  • Ginger fresh grated
  • Turmeric powder
  • Chili red powder
  • Garam masala
  • Cilantro fresh leaves

Fresh cilantro, or coriander leaves are a common herb in Indian dishes, so keep it on hand.  If you can buy it in a bunch with roots on it – great! Place the fresh cilantro bunch in a jar with water, cover with a plastic bag and store in the refrigerator for up to a week.

Ingredients

  • 2 tbsp Ghee Or oil of your choice
  • 1 tsp Cumin seeds
  • 2 tsp Ginger Fresh grated
  • 1 tsp Turmeric powder
  • 1 tsp Chili powder Kashmiri Lal mirch
  • 1 tsp Himalayan pink salt Fresh ground
  • 4 cups Cauliflower One medium head, cut into bit size pieces
  • 1 tsp Garam masala
  • 2 tbsp Water If necessary, to prevent burning
  • 1 tbsp Cilantro Fresh chopped

Instructions

  • Wash and chop the cauliflower into small, bite-size pieces. Set aside. Peel and grate the fresh giner and set aside.
  • Add the ghee to a large wok, pan or kadai pan and heat on medium heat. Add the cumin seeds and ginger and cook a few seconds until they release fragrance and seeds sputter, stirring continuously so it doesn't burn.
  • Add the Turmeric powder, red chili powder and salt, stirring continuously to mix well.
  • Add the chopped cauliflower, mix well to coat with all the spices.
  • Add water, stirring to prevent burning, cover and turn heat low and cook for about 15 minutes until the cauliflower is soft and tender. Stir occasionally so it doesn't stick to the bottom and burn.
  • When the cauliflower is done, add the garam masala and fresh cilantro leaves and mix to heat. Serve!
