About this Recipe
Devin’s favorite go-to meal. And this from a guy who grew up on “In ‘n’ Out” burgers. He will eat these everyday if he could. He does eat it with a HUGE side of dipping sauce of kethcup & mayonnaise. (Pure veg varieties that we buy in Vrindavan).
I eat it on a bed of steamed broccoli. You can also make grilled cheese sandwiches with the marinaded patties.
Homemade chaat masala
- 3 tbsp cumin seeds
- 1 tbsp corinader seeds
- 1.5 tbsp fennel seeds
- 1/4 cup dried mango powder
- 3 tbsp black salt
- 1.5 tsp black pepper ground
- 1.5 tsp ginger powder
- 1.5 tsp ajwain seeds
- 1 tsp dried mint
- 1/4 tsp Hing (or asafoetida)
Dry roast the cumin, corinader and fennel seeds – stirring on a dry griddle for a few minutes until they begin to brown and give off a nice aroma.
Add the dry roasted seeds and the rest of the ingredients into a spice grinder (or coffee bean grinder) and grind to a fine powder.
Store in the frig in an airtight jar.

Definitely a good candidate for low carb diet. (Just don’t eat with a burger bun!) For keto, have on a bed of steamed broccoli and a dollop of ghee!

Pan-fried Paneer Burgers
Equipment
- Fry pan
Ingredients
- 2 tsp Kashmiri red chili powder
- 1 tsp chaat masala
- 1 tsp Garam Masala
- 1/2 tsp Himalayan pink salt
- 1/2 tsp Black pepper Freshly ground
- 2 tsp lemon juice Fresh squeezed
- 2 tbsp Plain yogurt Or fresh milk, or water, enough to make a paste.
- 200 grams Paneer
- 2 tbsp Ghee
- 2 oz Cheese slices American cheese slices
Instructions
- Mix all ingredients into a paste (except ghee and paneer)
- Cut paneer into burger size and marinate for at least 15 minutes
- Heat ghee in a fry pan; when hot, add the marinated paneer slicees and cook until gollden brown on each side. Careeful not to burn.
- Just before removing, if you would like, add some slliced cheese and cover to melt the cheese.
- Serve on toasted burger buns with all the usual accouterments, or, as I did, serve on a bed of steamed broccoli.
